Ingredients: Serves 4-6

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 3 garlic cloves, minced
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 russet potatoes, diced
  • 1 cup frozen peas
  • 1 tbsp cornstarch + 2 tbsp water (optional for thickening)

Instructions:

  1. Heat olive oil in a large pot over medium-high heat. Brown beef on all sides.
  2. Add onion and garlic, cooking until fragrant. Stir in tomato paste.
  3. Pour in beef broth and Worcestershire sauce. Season with salt, pepper, and smoked paprika.

  6. If thicker stew is desired, mix cornstarch and water, then stir into the pot.
