Ingredients: Serves 3-4

  • 1½ lbs boneless skinless chicken thighs, cut into 1½-inch pieces
  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • 3 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp cornstarch + 1 tbsp water (slurry)
  • Sesame seeds & sliced green onions, for garnish
  • Wooden or metal skewers

Instructions

  1. Make the marinade: In a saucepan, combine soy sauce, honey, rice vinegar, brown sugar, sesame oil, ginger, and garlic. Simmer over medium heat for 3–4 minutes. Stir in the cornstarch slurry and cook until thickened, about 1–2 more minutes. Let cool completely.
  2. Marinate the chicken: Toss chicken with half the cooled teriyaki sauce in a bowl or bag. Refrigerate for 1–4 hours.
  3. Preheat grill to medium-high heat. Soak wooden skewers in water for 30 minutes if using.
  4. Assemble skewers: Thread marinated chicken onto skewers.
  5. Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  6. Brush with remaining sauce during the final few minutes of grilling.
