Cool & Creamy Mint Chocolate Pie

Ingredients: Yields (1) 9-inch pie

Crust:

  • 24 chocolate sandwich cookies, crushed
  • 5 tbsp melted butter

Filling:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • ¼ cup crème de menthe
  • 2 tbsp crème de cacao (optional)
  • ½ tsp vanilla extract
  • Few drops green food coloring (optional)
  • 8 oz whipped topping (Cool Whip)

Topping:

  • Extra whipped topping
  • Chocolate shavings or crushed cookies

Instructions

  1. Crust: Mix crushed cookies with melted butter. Press into a 9” pie dish; chill.
  2. Filling: Beat cream cheese and sugar until smooth. Mix in crème de menthe, crème de cacao, vanilla, and food coloring. Fold in whipped topping. Pour into crust; chill 4+ hours.
  3. Topping: Spread or pipe extra whipped topping over pie. Garnish with chocolate shavings.
