Gourmet Grilled Cheese with Truffle Butter & Three Cheeses

Ingredients: Serves 2

  • 4 slices of sourdough bread
  • 2 tbsp truffle butter (or regular butter with a drizzle of truffle oil)
  • ½ cup shredded Gruyère cheese
  • ½ cup sharp white cheddar cheese
  • ½ cup Fontina cheese
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp caramelized onions (optional but amazing)
  • 2 tbsp mayonnaise

Instructions:

  1. Prepare the bread: Spread truffle butter on one side of each slice. On the other side, spread a thin layer of mayonnaise (this helps achieve a golden crust).
  2. Layer the cheese: Mix all three cheeses in a bowl. Spread Dijon mustard and honey on two slices of bread, then layer the cheese mixture evenly. If using caramelized onions, add them now.
  3. Cook: Heat a skillet over medium-low heat. Place the sandwich in the pan and cook for 2-3 minutes per side until golden brown and the cheese is melted.
  4. Serve: Let it rest for a minute before slicing.

Elevated Roasted Tomato Basil Soup

Ingredients:

  • 2 lbs Roma or vine-ripened tomatoes, halved
  • 4 cloves garlic, peeled
  • 1 small yellow onion, diced
  • 2 tbsp olive oil
  • 2 cups vegetable broth
  • 1 cup heavy cream (or coconut milk for a lighter version)
  • ¼ cup fresh basil leaves, chopped
  • 1 tbsp balsamic vinegar
  • 1 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper to taste

Instructions:

  1. Roast the tomatoes: Preheat the oven to 400°F (200°C). Toss tomatoes and garlic with olive oil, salt, and pepper. Roast for 25-30 minutes until caramelized.
  2. Sauté the onion: In a large pot, heat a little olive oil over medium heat. Add the diced onion and sauté until softened (about 5 minutes).
  3. Blend: Add the roasted tomatoes, garlic, vegetable broth, and basil to the pot. Use an immersion blender (or regular blender in batches) to puree until smooth.
  4. Simmer: Stir in heavy cream and balsamic vinegar. Simmer on low for 10 minutes. Adjust seasoning.
  5. Serve: Garnish with extra basil and a drizzle of olive oil. Serve with your gourmet grilled cheese!
