Guinness & Maple Ribs

Ingredients: Serves 4-6

  • 2 racks of baby back ribs (about 3 pounds)
  • Salt and pepper, to taste
  • 1 can (12 oz) Guinness beer
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional, for a little heat)

Instructions:

  1. Preheat the Oven: Preheat your oven to 300°F (150°C).
  2. Prepare the Ribs: Pat the ribs dry with paper towels, then season both sides generously with salt and pepper.
  3. Make the Glaze: In a saucepan, combine the Guinness beer, maple syrup, brown sugar, Dijon mustard, apple cider vinegar, garlic, smoked paprika, black pepper, and red pepper flakes. Bring to a simmer over medium heat and cook for 10-15 minutes, until the glaze thickens.
  4. Cook the Ribs: Place the ribs on a baking sheet lined with foil. Brush the ribs generously with the glaze, then cover with foil. Bake in the preheated oven for 2.5-3 hours, until the ribs are tender.
  5. Glaze the Ribs: Remove the ribs from the oven and brush with more glaze. Increase the oven temperature to 400°F (200°C). Return the ribs to the oven, uncovered, and bake for an additional 15-20 minutes, basting every 5 minutes, until caramelized and sticky with a nice color.
  6. Serve: Let the ribs rest for 5-10 minutes before cutting. Serve with any remaining glaze on the side.
