Triple Garlic Mashed Potatoes with Roasted Garlic

Ingredients: Serves 4-6

  • 2 pounds Yukon Gold potatoes
  • 1 head garlic
  • 3-4 garlic cloves, minced
  • 1 tbsp garlic powder
  • 1 tbsp olive oil
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Fresh herbs (chives or parsley) for garnish (optional)

Instructions:

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft and fragrant. Squeeze the roasted garlic cloves into a bowl once cooled.
  2. Cook the Potatoes: Peel and cut potatoes into chunks. Place in a pot of salted water, bring to a boil, and cook for 15-20 minutes until fork-tender. Drain well.
  3. Prepare the Garlic: While the potatoes cook, sauté the minced garlic in butter over medium heat for 1-2 minutes until fragrant. Add the garlic powder and stir to combine.
  4. Mash the Potatoes: Return potatoes to the pot. Add the roasted garlic, sautéed garlic mixture, butter, and sour cream, then mash until smooth. Gradually pour in warm milk, stirring until creamy.
  5. Season and Serve: Taste and adjust with salt and pepper. Garnish with fresh herbs like chives or parsley for a beautiful touch.
