Triple Garlic Mashed Potatoes with Roasted Garlic
Ingredients: Serves 4-6
- 2 pounds Yukon Gold potatoes
- 1 head garlic
- 3-4 garlic cloves, minced
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 1/2 cup milk
- 1/4 cup butter
- 1/4 cup sour cream
- Salt and pepper to taste
- Fresh herbs (chives or parsley) for garnish (optional)
Instructions:
- Roast the Garlic: Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft and fragrant. Squeeze the roasted garlic cloves into a bowl once cooled.
- Cook the Potatoes: Peel and cut potatoes into chunks. Place in a pot of salted water, bring to a boil, and cook for 15-20 minutes until fork-tender. Drain well.
- Prepare the Garlic: While the potatoes cook, sauté the minced garlic in butter over medium heat for 1-2 minutes until fragrant. Add the garlic powder and stir to combine.
- Mash the Potatoes: Return potatoes to the pot. Add the roasted garlic, sautéed garlic mixture, butter, and sour cream, then mash until smooth. Gradually pour in warm milk, stirring until creamy.
- Season and Serve: Taste and adjust with salt and pepper. Garnish with fresh herbs like chives or parsley for a beautiful touch.
