Quick & Luxurious Eggs Benedict with Crispy Prosciutto
Ingredients: Serves 2-4
For the Benedict:
- 4 English muffins, split and toasted
- 8 slices prosciutto (or smoked salmon)
- 8 eggs (scrambled)
- 4 tbsp butter (for toasting muffins & cooking eggs)
- Salt & black pepper (to taste)
- Chopped chives (for garnish)
For the Quick Hollandaise:
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp melted butter
- Pinch of salt & cayenne pepper
Instructions:
1. Make the Easy Hollandaise Sauce:
- In a small bowl, whisk together mayonnaise, lemon juice, melted butter, salt, and cayenne pepper until smooth.
- Set aside and keep warm.
2. Toast the Muffins & Crisp the Prosciutto:
- Melt 2 tablespoons of butter in a pan over medium heat.
- Place the split English muffins in the pan, cut-side down, and toast until golden and crispy.
- In the same pan, cook the prosciutto slices for about 30 seconds per side until slightly crispy.
3. Scramble the Eggs:
- Whisk the eggs with salt and pepper.
- Melt 2 tablespoons of butter in a nonstick pan over low heat.
- Pour in the eggs and gently stir until they’re soft and creamy (about 2-3 minutes).
4. Assemble the Eggs Benedict:
- Place a toasted muffin half on each plate.
- Top with a slice of prosciutto (or smoked salmon).
- Spoon scrambled eggs over the prosciutto.
- Drizzle with the easy hollandaise sauce.
- Garnish with chopped chives for a fresh touch.
