Quick & Luxurious Eggs Benedict with Crispy Prosciutto

Ingredients: Serves 2-4

For the Benedict:

  • 4 English muffins, split and toasted
  • 8 slices prosciutto (or smoked salmon)
  • 8 eggs (scrambled)
  • 4 tbsp butter (for toasting muffins & cooking eggs)
  • Salt & black pepper (to taste)
  • Chopped chives (for garnish)

For the Quick Hollandaise:

  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp melted butter
  • Pinch of salt & cayenne pepper

Instructions:

1. Make the Easy Hollandaise Sauce:

  1. In a small bowl, whisk together mayonnaise, lemon juice, melted butter, salt, and cayenne pepper until smooth.
  2. Set aside and keep warm.

2. Toast the Muffins & Crisp the Prosciutto:

  1. Melt 2 tablespoons of butter in a pan over medium heat.
  2. Place the split English muffins in the pan, cut-side down, and toast until golden and crispy.
  3. In the same pan, cook the prosciutto slices for about 30 seconds per side until slightly crispy.

3. Scramble the Eggs:

  1. Whisk the eggs with salt and pepper.
  2. Melt 2 tablespoons of butter in a nonstick pan over low heat.
  3. Pour in the eggs and gently stir until they’re soft and creamy (about 2-3 minutes).

4. Assemble the Eggs Benedict:

  1. Place a toasted muffin half on each plate.
  2. Top with a slice of prosciutto (or smoked salmon).
  3. Spoon scrambled eggs over the prosciutto.
  4. Drizzle with the easy hollandaise sauce.
  5. Garnish with chopped chives for a fresh touch.
