Crispy Potato Cakes with Garlic Chive Sauce
Ingredients: Serves 2-4
Potato Cakes:
- 2 cups mashed potatoes (chilled)
- 1/2 cup shredded Irish cheddar
- 1/4 cup flour (plus more if needed)
- 1 egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp granulated garlic
- 2 tbsp chopped chives
- 2 tbsp butter + 1 tbsp olive oil (for frying)
Garlic Chive Sour Cream:
- 1/2 cup sour cream
- 1 clove roasted garlic, mashed (or 1/4 tsp granulated garlic)
- 1 tbsp chives, chopped
- 1/4 tsp salt + 1/4 tsp black pepper
Instructions
- Mix mashed potatoes, cheddar, flour, egg, salt, pepper, garlic, and chives until combined. Add flour if too sticky.
- Shape into 8 patties, about 1/2-inch thick. Chill for 10-15 minutes.
- Fry in butter and olive oil over medium heat, 3-4 min per side, until golden.
- Stir sour cream, garlic, chives, salt, and pepper together.
- Serve warm with garlic chive sour cream. Enjoy!
