Crispy Potato Cakes with Garlic Chive Sauce

Ingredients: Serves 2-4

Potato Cakes:

  • 2 cups mashed potatoes (chilled)
  • 1/2 cup shredded Irish cheddar
  • 1/4 cup flour (plus more if needed)
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp granulated garlic
  • 2 tbsp chopped chives
  • 2 tbsp butter + 1 tbsp olive oil (for frying)

Garlic Chive Sour Cream:

  • 1/2 cup sour cream
  • 1 clove roasted garlic, mashed (or 1/4 tsp granulated garlic)
  • 1 tbsp chives, chopped
  • 1/4 tsp salt + 1/4 tsp black pepper

Instructions

  1. Mix mashed potatoes, cheddar, flour, egg, salt, pepper, garlic, and chives until combined. Add flour if too sticky.
  2. Shape into 8 patties, about 1/2-inch thick. Chill for 10-15 minutes.
  3. Fry in butter and olive oil over medium heat, 3-4 min per side, until golden.
  4. Stir sour cream, garlic, chives, salt, and pepper together.
  5. Serve warm with garlic chive sour cream. Enjoy!
