Guinness BBQ Pulled Pork

Ingredients: Serves 6-8

  • 3-4 lbs pork shoulder (bone-in or boneless)
  • 1 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder (optional)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 can (12 oz) Guinness beer
  • 1 ½ cups BBQ sauce (your favorite or homemade)
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar

Instructions:

  1. Prepare the Pork: Pat the pork shoulder dry with paper towels. In a small bowl, combine the smoked paprika, garlic powder, onion powder (if using), cumin, chili powder, salt, and pepper. Rub the spice mix all over the pork shoulder.
  2. Sear the Pork: Heat the olive oil in a large skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side. This helps to lock in the flavors.
  3. Slow Cook the Pork: Transfer the seared pork to your slow cooker. Pour the Guinness beer around the pork. Cover and cook on low for 6-8 hours until the pork is incredibly tender and can be shredded easily with forks.
  4. Make the BBQ Sauce: In a bowl, whisk together the BBQ sauce, apple cider vinegar, and brown sugar. Once the pork is done, remove it from the slow cooker and shred it with two forks, discarding any bones or excess fat.
  5. Combine: Toss the shredded pork with the BBQ sauce mixture until well coated. If you prefer it extra saucy, feel free to add more BBQ sauce.
  6. Serve: Serve on soft buns with coleslaw or your favorite sides for a perfect meal.
