Ingredients: Makes One 8 x 8 Pan

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups granulated sugar

  • 2 teaspoons vanilla extract
  • ¾ cup unsweetened cocoa powder
  • ¾ cup all-purpose flour

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving an overhang for easy removal.
  2. Whisk melted butter, granulated sugar, and brown sugar until smooth and glossy.
  3. Add eggs one at a time, followed by the extra yolk and vanilla extract. Whisk until well combined.
  4. Sift in cocoa powder, flour, salt, and espresso powder (if using). Fold gently until just combined—don’t overmix!
  5. Stir in chocolate chips and spread the batter evenly into the pan.
  6. Bake for 30–35 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
