Savory Corned Beef Brisket: A Festive Tradition
Ingredients: Serves 5-7
- 3–4 lb corned beef brisket (with spice packet, if provided)
- 4 cups water + 1 cup beef broth (or 1 cup beer for depth)
- 1 onion, quartered
- 4 garlic cloves, smashed
- 2 bay leaves
- 1 tsp peppercorns
- 1 tsp mustard seeds
- ½ tsp coriander seeds
- 2–3 carrots, cut into 2-inch pieces
- 2 celery stalks, cut into 2-inch pieces
- 1 small cabbage, cored and cut into wedges
Instructions:
- Preheat oven to 325°F (163°C). Rinse brisket and pat dry.
- Sear: Sear brisket in a skillet for 3–4 minutes per side.
- Braise: Place brisket in a roasting dish, add water, broth, onion, garlic, and spices. Cover tightly with foil and bake for 2.5 to 3 hours.
- Add Veggies: Add carrots & celery, bake 30 minutes. Add cabbage, bake 20–25 minutes more until tender.
- Rest & Serve: Let brisket rest 10 minutes, slice against the grain. Serve with braised vegetables and a drizzle of cooking liquid.
