Mac and Cheese: Creamy, Cheesy Bliss

Ingredients: Serves 4-6

  • 1 lb pasta of your choice (Cavatappi is my favorite)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 8 oz package cream cheese, softened
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup gouda cheese, shredded
  • 1/2 tsp garlic powder
  • Salt and freshly cracked black pepper to taste
  • 1/2 cup extra shredded cheese for topping (optional)

Instructions:

  1. Cook the Cavatappi: Cook the pasta in salted water according to package instructions (about 8-10 minutes). Drain and set aside.
  2. Make the Sauce:
    • In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
    • Slowly add the milk and cream, whisking to prevent lumps. Stir in the softened cream cheese until smooth and melted.
    • Add the cheddar, mozzarella, and gouda cheeses, stirring until melted and smooth.
  3. Season: Stir in garlic powder, salt, and pepper to taste.
  4. Combine Pasta and Sauce: Add the drained cavatappi to the cheese sauce and stir to coat.
  5. Optional – Bake:
    • Preheat your oven to 375°F (190°C).
    • Transfer the mac and cheese to a greased baking dish.
    • Sprinkle extra cheese on top, if desired.
    • Bake for 10-15 minutes until the top is golden and bubbly.
