Mac and Cheese: Creamy, Cheesy Bliss
Ingredients: Serves 4-6
- 1 lb pasta of your choice (Cavatappi is my favorite)
- 2 cups whole milk
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1 8 oz package cream cheese, softened
- 1 1/2 cups sharp cheddar cheese, shredded
- 1 1/2 cups mozzarella cheese, shredded
- 1/2 cup gouda cheese, shredded
- 1/2 tsp garlic powder
- Salt and freshly cracked black pepper to taste
- 1/2 cup extra shredded cheese for topping (optional)
Instructions:
- Cook the Cavatappi: Cook the pasta in salted water according to package instructions (about 8-10 minutes). Drain and set aside.
- Make the Sauce:
- In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
- Slowly add the milk and cream, whisking to prevent lumps. Stir in the softened cream cheese until smooth and melted.
- Add the cheddar, mozzarella, and gouda cheeses, stirring until melted and smooth.
- Season: Stir in garlic powder, salt, and pepper to taste.
- Combine Pasta and Sauce: Add the drained cavatappi to the cheese sauce and stir to coat.
- Optional – Bake:
- Preheat your oven to 375°F (190°C).
- Transfer the mac and cheese to a greased baking dish.
- Sprinkle extra cheese on top, if desired.
- Bake for 10-15 minutes until the top is golden and bubbly.
