Ingredients: Makes 1 Loaf

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar (optional)
  • ½ teaspoon garlic powder (optional, adds depth)
  • 1½ cups shredded Irish cheddar cheese (like Kerrygold)
  • 1 (12-ounce) bottle Irish beer (like Guinness or Smithwick’s)
  • 2 tablespoons melted butter (for brushing)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, and garlic powder.
  3. Stir in shredded cheddar, evenly distributing it through the flour mixture.
  4. Pour in the beer and gently stir until just combined—don’t overmix! The batter will be thick.
  5. Transfer to the prepared loaf pan and smooth the top. Brush with melted butter.
  6. Bake for 40–45 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool for 10 minutes before slicing. Serve warm with butter!
