Ingredients: Serves 2-3

  • 1 ½ lbs white fish fillets
  • ¾ cup flour
  • ¼ cup cornstarch
  • ½ cup cornmeal
  • 1 ½ tsp seasoning salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 egg
  • ½ cup milk or water
  • Oil for frying
  • Lemon wedges for garnish

Instructions

  1. Prep the Fish – Pat fillets dry with paper towels to help the coating stick.
  2. Mix the Coating – In a bowl, whisk together flour, cornstarch, cornmeal, seasoning salt, black pepper, and garlic powder. In another bowl, whisk the egg and milk.
  3. Coat the Fish – Dip each fillet in the egg mixture, then dredge in the dry mix, pressing lightly to ensure a crispy crust.
  4. Fry – Heat about ½ inch of oil in a skillet over medium-high heat at 350°F. Fry fillets for 3 to 4 minutes per side until golden brown and crispy.
  5. Drain & Serve – Remove from oil and drain on a wire rack. Serve hot with lemon wedges.
